First, prepare the meat - it does not needonly rinse, but also dry with a paper towel. Slice the tenderloin into small portions, across the fibers, then pound the finished pieces and salt. Leave on the cutting board for a few minutes - the meat should be soaked with spices.

In the meantime, prepare a frying pan. As we will fry the meat in butter, then put it on a frying pan and melt, but the oil should not be burned, otherwise the taste of the meat will not be so gentle. On the melted butter, lay out pieces of meat and fry them for 4 minutes (2 minutes on one side and 2 on the other side). Remove the meat from the frying pan.

Prepare a creamy sauce:

  • whip the cream with the addition of soy sauce, add a little salt and pepper;
  • bring to a boil over low heat;
  • pour in cognac;
  • with constant stirring, respect the sauce by a third (it should become thick).
